Recipe Of The Week: Baked Eggs in Avocado


Breakfast is a nutritious way to start out your day. Eating breakfast refuels your body, enhances your mood, improves your concentration, helps you maintain a healthy weight, and is the foundation of a healthy diet.

Eating breakfast does not mean downing a cup of coffee and a doughnut! You'd be surprised how many healthy breakfast ideas require very little effort when put into practice.

Baked eggs in avocado, it's the breakfast that always impresses, and it's easier to make than you might think!

Ingredients:

2 avocados

4 large eggs

salt and pepper to taste

Optional Toppings:

goat cheese

cilantro

chives

green onion (finely chopped)

Method:

- Heat the oven to 425 degrees fahrenheit.

- Slice the avocados in half, lengthwise and twist to separate. Remove the pit and scoop out 1-1.5 tablespoons of avocado, creating a larger cavity.

- Place the avocado halves in a baking dish, to keep them upright, and gently crack one egg on top of each half.

- Add a pinch of salt and pepper, let this bake for 10 to 15 minutes.

- Once it bakes off, take it out from the oven and add on all your toppings. Enjoy!
