Recipe Of The Week: Beetroot, Apple and Berries Smoothie


Smoothies are everywhere, at the fast-food restaurants and coffee shops! But for the most part, those smoothies might be better termed fruit milkshakes. Stuffed with sugar, frozen yogurt and even ice cream, those smoothies do more harm than good. But made properly, smoothies condense large amounts of fruits and vegetables into one compact and very tasty drink.

The deep vibrant colour of this smoothie is proof of its high antioxidant content. The beetroot, apple and berries give a nice mix of sweet, earthy and tart flavours.

Beetroots are the sweetest vegetable, high in good carbs, low in calories and give you the right kind of energy.

This vibrant beetroot smoothie is so easy to make! It's perfect to start your morning

with or refresh you in the afternoon.

Ingredients:

1 ½ cups frozen berries

1 cup grated beetroot

1 peach or nectarine flesh

1 grated apple

2-3 teaspoons liquid honey or apple syrup

3⁄4 cup water ​

5-6 ice cubes

lime slices for garnish (optional)

Method:

- Place all ingredients in a blender and blend until smooth. Add a little more water if needed to reach

desired consistency.

- Serve in glasses and garnish if a slice of lime if you like.

 

Side notes:

- You can add some crunch to your smoothie by sprinkling on chia seeds, they're great for keeping hunger

at bay.

- Try to replace the water with coconut/almond milk for some more healthy fat and protein.
